The saucerer's apprentice!
"White sauce is very easy to make but there are still people who are unsure of how to make it – otherwise supermarkets wouldn't sell so much of the packet mix stuff!" Kay explains how to make a simple white sauce, which can also be the basis of many flavoured sauces.

Feeling saucy?
"Roux is a cooked mixture of equal amounts of flour and fat – usually butter, although any edible fat could be used. It's used to thicken sauces and gravies, and is the basis for many classic sauces such as Béchamel and velouté. You can also use it to make a basic white sauce, to which you can add various additional flavourings, if desired, such as parsley, mustard, cheese, onion. etc." See Kay's photo-essay of how to make this fundamental sauce ingredient.

An Italian gem
"We sat down and looked at the menu. It was short, but laid emphasis on natural, freshly-prepared ingredients and hand-made pasta and pizza dough. This sounded encouraging. After a friendly chat with the waiter, we suddenly realised that time was marching on and it was only 25 minutes until their closing time! So we ordered, and prepared ourselves for a wait – which in the end wasn't very long at all." Kay and Dave stumble across a little Italian gem in Penang.

That sinking feeling...
"Tea arrived and was poured – and looked woefully weak. Kay commented on this, but the waiter didn't seem to notice and carried on pouring anyway. As soon as he'd gone we lifted our teapot lids and poured the tea back in, noticing as we did so that the 'tea' was actually tea bags." Kay and Dave sample afternoon tea at the Eastern & Oriental's 1885 Restaurant – and get less than they bargain for...

Net nasties!
"Unfortunately some unscrupulous bloggers have taken the trackback facility and subverted it, so that they can get a free link to their site without actually writing a proper article. Needless to say, the people who use this tactic generally aren't doing it to provide a useful service to the Web user – they're doing it to try to make money..." Dave bemoans the subversion of yet another useful Web technology – and warns about the need to keep software up-to-date and secure.
