I am currently in the process of getting my green card and i am also getting serious with my girlfriend. She is irish and i am Scottish. If i successfully get my green card and then we get married does this entitle her to work in the U.S ?

No. She will have to go through the immigration process herself and get her own green card.

That will make no difference. Permanent residency (which is what the green card allows) is granted on an individual basis. She'd still have to go through the process whether you're married or not.
